Potato and Leek Soup


What You'll Need:

2 cups Snowville Creamery whole milk

4 cups chicken stock

4 cups potatoes, chopped

1 large onion, chopped

2-3 leeks, cleaned and chopped finely

​1/4 cup butter

3 Tablespoon flour

salt and pepper to taste

Prep Time: 15 mins

Cook Time: 15 mins

Bring the chicken stock to a boil, add vegetables.


Reduce heat and simmer, covered, until the vegetables are tender. Meanwhile, melt the butter in a saucepan.


Stir in the flour and cook over low heat for 3 minutes, whisking constantly.

DO NOT let the mixture brown. Add the milk slowly, continuing to whisk until the mixture is smooth and slightly thickened.


Combine the 2 mixtures. Salt and pepper to taste and enjoy!
