Creamy Asparagus Soup
What You'll Need:
1/3 cup Snowville Creamery whole milk
1 tbsp butter
1/2 small yellow onion, diced
4 cups vegetable broth
1 bunch asparagus, woody stems removed, spears cut into 1 inch pieces
2-3 small potatoes, diced
sea salt and ground pepper
Garnish: chopped chives and salsa
Prep Time: 5 mins
Cook Time: 20 mins
Melt butter in a medium pot over medium heat. Add onions and cook, stirring often, until translucent, about 5 minutes
Add broth and potatoes and bring to a boil. Reduce heat to medium-low, add asparagus and simmer gently until potatoes and asparagus are tender, 10-15 minutes.
Using an immersion blender, puree until smooth (or transfer soup to a blender, puree, and then return to pot) whisk in milk and season with salt and pepper. Ladle soup into bowls and garnish.
