Why Does Snowville Milk Have Cream On Top?

Open a bottle of Snowville milk that’s been sitting in the fridge and you’ll probably see it: a thick layer of cream at the top.

Nothing went wrong.

That’s just what milk does.

Milk naturally contains tiny droplets of fat. Because fat is less dense than the rest of the milk, those droplets slowly rise when the bottle sits undisturbed, forming that glorious little cream line.

Most milk doesn’t do this because it’s been homogenized, which is a process that breaks the fat into droplets small enough to stay evenly dispersed.

There’s nothing wrong with that.

We just don’t think our milk needs it.

At Snowville, we’re thoughtful about every step between the cow and the carton. Our partner farmers have already done the hard work of producing really good milk. Our job is to ensure it's safe, package it well, and preserve as much of its natural character as we can.

If a step doesn’t make the milk better, safer, or more delicious, we ask: Why are we doing it?

For homogenization, our answer is simple: we don’t need to.

So, we skip it.

And the cream rises.

Give the bottle a good shake, and the cream mixes right back in. Or don’t. Spoon a little off the top for your coffee, put it on oatmeal, or sneak a taste straight from the spoon. We’re not here to tell you how to live your life.

The cream line isn’t a defect or something we forgot to fix. It’s simply what happens when milk is allowed to behave like milk.

And that gets at something bigger about how we make food at Snowville.

Minimal processing isn’t about doing nothing. It’s about understanding why we do what we do and not adding steps simply because they’ve become standard.
