Decadent Macaroni and Cheese

What You'll Need:
1 1/2 cups Snowville Creamery half & half
1 pound campanelle pasta (perfect shape for the sauce)
1 yellow onion, chopped
3 cloves garlic, minced
8 ounces center cut bacon, cooked, drained, and crumbled
8 ounces mushrooms, sliced
1/4 white port or sweet sherry
3/4 pound Gruyere, grated
1 tbsp coarse sea salt
Bring a large pot of water to a rapid boil for the campanelle.
While you're waiting for the water, fry the bacon in a large sauté pan. Reserve half the fat; drain and crumble bacon.
Add onion, garlic, and mushrooms to bacon greasy pan and sauté 'til tender.
Deglaze pan with port or sherry; add al dente pasta to sauté pan (reserve ½ cup pasta water); add bacon, half and half and grated cheese.
Add pasta water, if necessary, to reach desired consistency. Sprinkle with salt. Serve immediately.
After you're finished, take a long walk until you can feel your arteries flowing again!
