Lemon Ginger Yogurt Chicken Salad

What You'll Need:

1/2 cup Snowville Creamery 6% Plain Yogurt

4 cups cooked chicken breast, diced

1 cup dark sweet cherries, cut up

1 fresh mango, diced

2 oz macadamia nuts, chopped

2 tbsp fresh mint, minced

1/4 tsp salt

1 tsp lemon juice

1/4 tsp finely grated lemon zest

1 tsp grated fresh ginger root

In a large mixing bowl, gently mix the cooked chicken, lemon, ginger, salt, mango, mint, and nuts.


Stir in the Snowville Creamery 6% Plain Yogurt a little at a time as needed.

Just before serving, stir in the cherries (their color will "bleed" onto the rest of the ingredients.)

Gently spoon chicken mixture into lettuce cups.

Garnish with mint leaves and mango "blossom."

Serve cold.
