Chorizo and Potato Soup


What You'll Need:

1 cup Snowville Creamery half and half

1 pound bulk chorizo

1 pound new red potatoes, diced

¾ cup yellow onions, diced

1 tbsp garlic, minced

½ red bell pepper, diced

2 cup frozen cut spinach

4 cups water

Prep Time: 10 mins

Cook Time: 25 mins

Allow half and half to come to room temperature. Adding really cold milk to hot liquid might cause it to separate and “break.”

Place onions, bell pepper and crumbled sausage in a large saucepan and cook over medium heat until the onions are tender.


Add garlic and cook one minute longer. Drain in a colander.


Add water and potatoes; cook 20 minutes or until potatoes are tender. Add spinach and simmer four minutes and then add half and half.
